- 2 sheets Puff Pastry Sheets, thawed
- 2 cups Fresh Spinach, chopped
- 1 cup Ricotta Cheese
- 1/2 cup Parmesan Cheese, grated
- 1 Egg, beaten for egg wash
- 1 tsp Garlic Powder
- Salt & Pepper, to taste
- 1 tbsp Olive Oil, optional
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Sauté the chopped spinach until wilted, then remove from heat and allow to cool slightly.
- In a mixing bowl, combine the wilted spinach with ricotta cheese, grated Parmesan cheese, garlic powder, salt, and pepper until smooth.
- Roll out the thawed puff pastry sheets on a clean surface and cut into squares (4–6 per sheet).
- Place 1–2 tablespoons of the spinach mixture in each square. Fold and seal edges using a fork.
- Brush the tops with beaten egg for a golden finish.
- Bake for 20–25 minutes until puffed up and golden brown.
