  • Salt & Pepper, to taste
  • 1 tbsp Olive Oil, optional

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Sauté the chopped spinach until wilted, then remove from heat and allow to cool slightly.
  3. In a mixing bowl, combine the wilted spinach with ricotta cheese, grated Parmesan cheese, garlic powder, salt, and pepper until smooth.
  4. Roll out the thawed puff pastry sheets on a clean surface and cut into squares (4–6 per sheet).
  5. Place 1–2 tablespoons of the spinach mixture in each square. Fold and seal edges using a fork.
  6. Brush the tops with beaten egg for a golden finish.
  7. Bake for 20–25 minutes until puffed up and golden brown.
