Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine chopped apples, light brown sugar, cinnamon, and ginger; set aside.
- In another bowl, whisk together egg, white sugar, vegetable oil, sour cream, and vanilla until smooth.
- Gradually add flour, baking soda, and kosher salt to the wet ingredients; mix until just combined.
- Fold in the apple mixture gently.
- Pour batter into a greased 9×5 inch baking pan and bake for about 55 minutes or until a toothpick comes out clean.
- Cool for 10 minutes before transferring to a cooling rack; drizzle with glaze made from powdered sugar, vanilla extract, and milk.
