Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease lightly.
- In a large mixing bowl, combine flour, baking powder, salt, granulated sugar, and cinnamon.
- In another bowl, whisk together milk, vegetable oil, egg, vanilla extract, and apple butter.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined.
- In a small bowl, mix together brown sugar, cinnamon, and additional flour for the topping; cut in cold butter until crumbly.
- Scoop batter into each muffin liner until half full, then add a dollop of apple butter on top before sprinkling with the crumble mixture.
- Place in the oven and bake for about 22 minutes or until a toothpick inserted comes out clean.
