  • 1/2 teaspoon baking soda

  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar

Instructions

  1. Preheat oven to 350°F (180°C) and line a 9×4 inch baking tin with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. In a large mixing bowl, cream butter and granulated sugar until fluffy. Add eggs one at a time and mix well. Stir in vanilla.
  4. Gradually add half of the dry ingredients to the wet mixture; mix until combined. Add buttermilk and stir until incorporated, then fold in remaining dry ingredients.
  5. In a separate bowl, toss diced apples with brown sugar and cinnamon until coated.
  6. Pour half of the batter into the prepared tin, sprinkle half of the apple mixture over it, swirl gently with a knife. Repeat with remaining batter and apples.
  7. Bake for 55-65 minutes or until a toothpick inserted comes out clean. Let cool before slicing.
