- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1 teaspoon ground cinnamon
- 1/2 cup butter (room temperature)
- 3/4 cup granulated sugar
- 2 large eggs (room temperature)
- 3/4 cup buttermilk
- 2 teaspoons vanilla extract
- 2 medium apples (peeled and diced)
- 1/3 cup brown sugar
Instructions
- Preheat oven to 350°F (180°C) and line a 9×4 inch baking tin with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon; set aside.
- In a large mixing bowl, cream butter and granulated sugar until fluffy. Add eggs one at a time and mix well. Stir in vanilla.
- Gradually add half of the dry ingredients to the wet mixture; mix until combined. Add buttermilk and stir until incorporated, then fold in remaining dry ingredients.
- In a separate bowl, toss diced apples with brown sugar and cinnamon until coated.
- Pour half of the batter into the prepared tin, sprinkle half of the apple mixture over it, swirl gently with a knife. Repeat with remaining batter and apples.
- Bake for 55-65 minutes or until a toothpick inserted comes out clean. Let cool before slicing.
