Instructions
- Preheat your oven to 175°C (350°F) and prepare a springform pan by greasing it.
- For the crust, crush the biscoff cookies, mix with melted butter, and press into the pan.
- Make the streusel topping by combining melted butter, flour, brown sugar, and oats until crumbly.
- Toss apple slices with brown sugar and cinnamon; set aside.
- In a mixing bowl, beat cream cheese with sugar until smooth; add yogurt, spices, and eggs one at a time.
- Layer half of the cheesecake batter over the crust, followed by half of the apple filling; repeat layers.
- Top with streusel mixture and bake for about 85 minutes or until set; cool gradually in the oven.
