- 1 teaspoon paprika
- 2 teaspoons red chili powder (adjust to taste)
- 1 teaspoon garam masala
- 2 tablespoons oil (vegetable or mustard)
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1.5 lbs beef chuck, cut into bite-sized pieces
- 1 large tomato, pureed
- 1 cup beef broth or water
- 1 tablespoon white vinegar or lemon juice
Instructions
- In a small bowl, combine all the spices for the Madras spice mix and set aside.
- Heat oil in a large deep pan over medium heat. Sauté onions until golden brown (about 10 minutes). Add garlic, ginger, and dried chilies; stir until fragrant (1-2 minutes).
- Increase heat to medium-high and add beef; sear until browned (5-7 minutes).
- Sprinkle the spice mix over the beef; toast for about 30 seconds.
- Stir in pureed tomato, salt, black pepper, and vinegar; cook for another 5 minutes.
- Pour in broth or water; bring to a boil then reduce heat to low. Cover and simmer gently for 60-75 minutes.
- Taste and adjust seasoning if needed; garnish with fresh cilantro before serving.
