Ingredients
- 2 salmon fillets (150-180g each)
- 1 tsp Cajun seasoning (or smoked paprika + chili powder)
- Salt and black pepper, to taste
- 3 tbsp olive oil
- 2 cups baby potatoes, halved
- 2 cloves garlic, minced
- Chopped parsley (for garnish)
- 1 bunch asparagus, trimmed
- 1 cup shredded mozzarella (or dairy-free cheese alternative)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss halved baby potatoes with olive oil, minced garlic, salt, and pepper. Spread on a baking tray and roast for 25-30 minutes until golden.
- On another tray, arrange trimmed asparagus, drizzle with olive oil, and season. Bake for 12-15 minutes; add mozzarella during the last 5 minutes until melted.
- Season salmon fillets with Cajun seasoning and olive oil. Bake or pan-sear at 400°F (200°C) for 12-15 minutes until cooked through.
- Serve by layering crispy potatoes, cheesy asparagus, and salmon on plates; garnish with parsley.
