Instructions
- In a medium bowl, whisk together the all-purpose flour, cake flour, baking powder, baking soda, salt, and cornstarch.
- In a stand mixer, beat the butter with granulated and brown sugars on medium speed until light and fluffy.
- Add the egg, egg yolk, and vanilla extract; mix until smooth.
- Gradually incorporate the dry ingredients into the wet mixture on low speed until just combined.
- Fold in the chocolate chips and chopped dark chocolate using a spatula.
- Chill the dough for at least one hour or up to 24 hours.
- Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
- Scoop large balls of dough (about 1/3 cup each) onto the prepared sheets, spacing them about three inches apart.
- Bake for approximately 15-18 minutes until edges are set but centers appear slightly underbaked.
