- 2 overripe bananas
- ½ cup canola oil
- ½ cup milk
- ½ cup caster sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups plain flour

Instructions
- Preheat your oven to 160°C / 320°F (fan) or 180°C / 355°F (standard). Grease and line a loaf tin with baking paper.
- In a mixing bowl, mash the bananas until smooth. Add canola oil, milk, caster sugar, brown sugar, eggs, and vanilla extract; mix until well combined.
- Sift in the flour, baking powder, and salt. Stir gently until just combined; lumps are fine.
- Pour the batter into the prepared loaf tin and bake for 45-55 minutes until golden brown and a skewer inserted comes out clean.
- Let cool in the tin for about 10 minutes before transferring to a wire rack.
