Instructions
- In a mixing bowl, combine 2 cups of coconut milk and 1 mashed ripe banana. Stir well.
- Add 2 tablespoons of maple syrup (if using), 1 teaspoon of vanilla extract, and a pinch of salt. Mix until combined.
- Stir in 1/2 cup of chia seeds until evenly distributed.
- Transfer to an airtight container and refrigerate for at least 120 minutes or overnight to set.
- Before serving, give it a good stir and top with fresh fruits, nuts, or granola as desired.
