- 2 1/2 tbsp light mayonnaise
- 2 tbsp scallions (chopped fine)
- 1 1/2 tbsp Thai Sweet Chili Sauce
- 1/2 tsp Sriracha (or to taste)
- 40 large raw shrimp (12.8 oz, shelled and deveined)
- Fresh cracked pepper
- Oil spray
- 2 tbsp fresh parsley (for garnish)
Instructions
- Prepare the sauce by combining mayonnaise, scallions, sweet chili sauce, and Sriracha in a bowl. Set aside.
- Soak wooden skewers in water for at least 20 minutes to prevent burning or use metal skewers.
- Season the shrimp with cracked pepper.
- Thread five shrimp onto each skewer until all shrimp are used.
- Preheat the grill over medium heat and lightly oil it.
- Grill the skewers for about 6-8 minutes, turning halfway until shrimp are opaque.
- Brush with sauce before serving immediately.
