- ⅓ cup olive oil
- 2 cloves garlic
- 8 large prawns (shelled and deveined)
- 1–2 chillies (to taste)
- Juice and zest of 1 lemon
- Fresh parsley (for garnish)
- Salt & pepper to taste
- Fresh lemon wedges for serving
- Fresh crusty bread of your choice for dipping in the sauce
Instructions
- Start your BBQ grill by lighting firelighters and adding charcoal until hot.
- In a pan over medium heat, combine olive oil, grated garlic, finely sliced chillies, lemon zest, and juice. Cook for about 2 minutes until fragrant.
- Marinate the prawns in half of the garlic mixture for at least 15 minutes.
- Once coals are white hot, grill the prawns for about 1 minute on each side until pink and charred.
- Drizzle remaining garlic mixture over cooked prawns and serve immediately with lemon wedges and crusty bread.
