- 2 pounds boneless skinless chicken breasts
- 2 cups fresh pineapple chunks
- 1 red bell pepper
- 1 sweet onion
- ⅔ cup barbecue sauce
- ⅔ cup teriyaki sauce
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger
Instructions
- In a medium bowl, mix the barbecue sauce, teriyaki sauce, minced garlic, and grated ginger. Reserve half of this marinade for later.
- Marinate the chicken in the remaining sauce for at least 2 hours.
- Thread chicken, pineapple, bell pepper, and onion onto skewers.
- Preheat the grill to medium heat.
- Grill kabobs for about 10 minutes or until chicken reaches an internal temperature of 165°F, basting with reserved sauce during the last few minutes.
- Serve hot and enjoy!
