Ingredients
- 1 tablespoon lemon juice
- 1/2 teaspoon kosher salt
- 3 tablespoons extra-virgin olive oil
- 2 cups roasted or canned beets (cut into 1/2" pieces)
- 1 medium cucumber (seeded and thinly sliced)
- 4 oz. feta cheese (crumbled)
- 1/4 cup fresh dill (roughly chopped)
Instructions
- In a small bowl, whisk together lemon juice and salt until dissolved. Gradually drizzle in olive oil while whisking to create the dressing.
- In a large bowl, combine sliced beets with half of the dressing and mix gently. Let sit for a few minutes.
- Just before serving, add cucumber, feta cheese, dill, and the remaining dressing to the beet mixture. Toss gently to combine.
