- 5 roma tomatoes

- 8 ounces feta cheese
- Dressing: olive oil, red apple vinegar, garlic, oregano, dill, salt & pepper
- Fresh parsley (for garnish)
Instructions
- Wash and chop all vegetables as listed.
- In a large mixing bowl, combine bell pepper, cucumber, tomatoes, red onion, olives, and feta.
- In a separate bowl, whisk together olive oil, vinegar, garlic, herbs, salt & pepper until blended.
- Pour the dressing over the vegetable mixture and gently toss until coated.
- Garnish with chopped parsley before serving.
