- 9–10 large organic lemons
- 750 ml high-proof neutral spirit (substitute with fruit juice or broth for alcohol-free)
- 800 g sugar
- 1 liter water
Instructions
- Prepare a clean mason jar with a tight-fitting lid.
- Use a vegetable peeler to remove the yellow peels from the lemons, avoiding the white pith.
- Place the lemon peels in the mason jar and cover them with the high-proof spirit. Seal tightly.
- Store in a dark place for at least one week, shaking occasionally.
- After steeping, dissolve sugar in water over low heat to create a syrup; let cool completely.
- Strain the infused liquid through cheesecloth into a pot, removing all solids.
- Combine the cooled syrup with the strained infusion and stir gently.
- Bottle your limoncello using a funnel and enjoy or store.
