- 1/2 cup grated cheddar cheese
- 1/4 cup crushed tortilla chips
- 1/4 cup sour cream
- 2 tbsp red salsa
- 1/2 tsp ground cumin
- juice of 1/2 lime
Instructions
- Prepare the dressing by mixing sour cream with salsa, cumin, and lime juice until smooth.
- Cook corn as preferred (grilled or boiled) and chop all vegetables uniformly.
- In a large mixing bowl, combine romaine lettuce, bell pepper, black beans, corn, tomatoes, green onions, cheese, and tortilla chips.
- Toss salad with dressing just before serving; add extra toppings if desired.
