- Sugar (to taste)
- 6 oz cream cheese
- 4 tablespoons milk
- 2 tablespoons fresh lime juice
- Β½ teaspoon lime zest (optional)
- 1 Β½ teaspoons vanilla extract
- Β½ cup powdered sugar
Instructions
- Cook blackberries and water in a saucepan over medium heat for about 10-15 minutes until soft. Sweeten with sugar if needed.
- Blend the cooked blackberries until smooth, then refrigerate until cool.
- Beat cream cheese, milk, lime juice, zest (if using), vanilla extract, and powdered sugar until smooth; refrigerate.
- In popsicle molds, layer blackberry puree and cream cheese mixture alternately, inserting sticks in the center.
- Freeze until solid; run warm water over molds if needed to release popsicles.
