- 1 pint fresh blueberries
- 2 ripe peaches, diced
- 2 Persian cucumbers, thinly sliced

- 3 tablespoons fresh lemon juice

- 1 tablespoon olive oil

Instructions
- Rinse blueberries and pat dry. Dice peaches and slice cucumbers. Combine all in a large mixing bowl with crumbled feta.
- In a separate jar, mix lemon juice, Dijon mustard, honey, olive oil, chopped herbs, salt, and pepper. Shake or whisk until smooth.
- Pour vinaigrette over salad ingredients and gently toss to coat.
- Serve immediately or refrigerate for up to a few hours before serving.
