Instructions
- Melt the butter in a saucepan over low heat.
- Stir in the espresso powder until well combined.
- In a mixing bowl, mash three ripe bananas until smooth.
- Combine melted butter and espresso mixture with mashed bananas; mix well.
- Add granulated and brown sugar; stir until combined.
- Mix in the beaten egg until smooth.
- Gradually fold in flour, baking soda, and salt until just combined.
- Gently fold in grated semi-sweet chocolate.
- Grease a loaf pan and pour in the batter.
- Bake at 375°F (190°C) for about 40 minutes or until a toothpick comes out clean.
