- 4 salmon fillets (6 oz each)
- ½ cup peach preserves
- 2 tablespoons bourbon
- 1 tablespoon Dijon mustard
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- Salt and freshly ground black pepper
- Optional: red pepper flakes for heat
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small saucepan, combine peach preserves, bourbon, Dijon mustard, soy sauce, apple cider vinegar, minced garlic, smoked paprika, and optional red pepper flakes. Simmer over medium heat for 3–5 minutes until slightly thickened.
- Pat salmon fillets dry and season with salt and pepper; drizzle with olive oil.
- Place fillets on the baking sheet and generously brush with the glaze.
- Roast in the oven for 12–15 minutes until the salmon flakes easily with a fork.
