- 1 packet dry ranch seasoning mix
- 2 teaspoons ground black pepper
- 8 Russet potatoes, peeled and diced
- 2 pounds boneless, skinless chicken breasts, cut into pieces
- 1 cup mild cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 8–10 slices thick-cut turkey bacon, cooked and crumbled
Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine diced potatoes with olive oil, buffalo sauce, ranch seasoning mix, and black pepper. Toss until well-coated.
- Spread the seasoned potatoes in a single layer on a lined baking sheet and roast for about 30-35 minutes until golden brown.
- While the potatoes are roasting, mix chicken pieces with additional buffalo sauce.
- Once the potatoes are ready, layer the marinated chicken on top.
- Sprinkle both cheeses over the chicken and add crumbled turkey bacon.
- Return to the oven and bake for an additional 25-30 minutes until the chicken is cooked through and cheese is melted.
