- 1 lb boneless, skinless chicken breasts
- 12 oz linguine pasta
- 3 tbsp unsalted butter
- 4 cloves garlic
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 tsp Cajun seasoning
- Salt and freshly ground black pepper, to taste
- 2 tbsp olive oil
- Fresh chopped parsley for garnish
Instructions
- Cook the linguine in salted boiling water until al dente; reserve pasta water and drain.
- Season chicken with Cajun seasoning, salt, and pepper.
- Sear the chicken in a skillet with olive oil and 1 tbsp of butter until golden brown and fully cooked. Remove from skillet.
- In the same skillet, sauté remaining garlic, then add heavy cream and bring to a simmer.
- Stir in mozzarella and Parmesan until smooth; adjust thickness with reserved pasta water if necessary.
- Toss cooked linguine in the creamy sauce, then add seared chicken on top.
- Serve garnished with fresh parsley.
