Instructions
- Cook the tortellini in boiling salted water according to package instructions. Drain and cool under cold water.
- In a mixing bowl, whisk together olive oil, lemon juice, salt, and pepper. Add cooled tortellini, tomatoes, and mozzarella; toss gently and marinate for at least 15 minutes.
- Assemble skewers by threading a cherry tomato, basil leaf, tortellini, and mozzarella ball onto each skewer until ingredients are used up.
- Arrange on a platter and drizzle with balsamic glaze just before serving.
