- 1¼ cups old-fashioned oats
- ½ cup toffee bits
- 14 caramels

Instructions
- In a stand mixer, beat the butter and sugars on medium-high speed until light and fluffy (about 3–4 minutes). Add the egg and vanilla; mix until smooth.
- Gradually add salt, baking powder, baking soda, and flour; mix just until combined. Fold in oats and toffee bits gently.
- Scoop dough into balls using a tablespoon, placing one soft caramel in the center of each ball without pushing it too far in. Chill dough for at least 2 hours.
- Preheat oven to 365°F (185°C). Line baking sheets with parchment paper; place cookie balls on sheets, sprinkle with flaked salt, and bake for 10–12 minutes or until edges are golden.
