Instructions
- Slice the apples into matchsticks and toss them with lemon juice in a bowl to prevent browning.
- In a large mixing bowl, combine matchstick carrots, diced onion, and dried cranberries.
- Add the apple mixture to the mixing bowl along with vanilla yogurt, mayo, sugar, salt, and pepper. Mix well.
- Gently fold in drained mandarin segments.
- Cover the salad and refrigerate for at least three hours before serving.
