Ingredients
- 2 heads of romaine lettuce (washed and chopped)
- 3 celery stalks (chopped)
- 1/2 cup red onion (thinly sliced)
- 1 cup sharp cheddar cheese (cubed)
- 2 gala apples (thinly sliced)
- 1/4 cup extra virgin olive oil
- Juice of 1/2 lemon
- 1 tablespoon Dijon mustard
- 2 tablespoons red apple vinegar
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine chopped romaine lettuce, celery, red onion, cheddar cheese, and apple slices. Season with freshly cracked black pepper.
- In a mason jar, combine olive oil, lemon juice, Dijon mustard, red apple vinegar, oregano, salt, and black pepper. Seal tightly and shake until well blended.
- Pour half of the dressing over the salad mixture and toss gently to coat. Adjust with more dressing if desired.
- Serve immediately or store in an airtight container in the refrigerator for up to 3–4 days.
