  • 1 1/2 cups shaved parmesan cheese
  • 1/4 cup lemon juice
  • 1 teaspoon dijon mustard
  • 1/4 cup mayonnaise
  • 3 Tablespoon olive oil
  • 1 Tablespoon honey
  • 1 clove garlic, grated
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Prepare the salad ingredients by slicing celery, chopping apples, finely chopping cucumber, slicing shallot, chopping dates, and coarsely chopping nuts. Combine in a large mixing bowl with both chopped Parmesan cheeses.
