- 8 pitted dates, chopped
- 1/2 cup chopped walnuts or pecans
- 1/4 cup chopped or shaved parmesan cheese
- 1 1/2 cups shaved parmesan cheese
- 1/4 cup lemon juice
- 1 teaspoon dijon mustard
- 1/4 cup mayonnaise
- 3 Tablespoon olive oil
- 1 Tablespoon honey
- 1 clove garlic, grated
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- Prepare the salad ingredients by slicing celery, chopping apples, finely chopping cucumber, slicing shallot, chopping dates, and coarsely chopping nuts. Combine in a large mixing bowl with both chopped Parmesan cheeses.
- In a separate bowl, whisk together lemon juice, Dijon mustard, olive oil, honey, grated garlic, salt, and pepper to create the dressing.
- Pour the dressing over the salad mixture and toss gently until evenly coated. Serve immediately or refrigerate for later enjoyment.
