- 1/3 cup lemon juice
- 1/4 to 1/3 cup olive oil
Instructions
- Soak sliced shallots in lemon juice for about 10 minutes to mellow their flavor.
- Toast walnuts in a dry skillet over medium heat until golden brown, stirring frequently.
- In a large mixing bowl, combine soaked shallots with their lemon juice, salt, pepper, olive oil, toasted walnuts, chopped dates, and celery.
- Toss all ingredients together gently until well combined.
- Top with parmesan shavings just before serving.
