- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 4 tbsp unsalted butter
- 4 cloves garlic
- 1 tsp Cajun seasoning
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1 cup cubed Velveeta cheese
- 2 oz cream cheese
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- Cook rotini: Boil salted water, add rotini, and cook until al dente. Reserve ½ cup pasta water.
- Season chicken: Toss chicken pieces with Cajun seasoning, smoked paprika, salt, and pepper.
- Sear chicken: In a skillet over medium-high heat, add olive oil and butter. Cook seasoned chicken for 6-8 minutes until golden brown.
- Add garlic and cheese: Stir in half the minced garlic and one tablespoon of butter; top with shredded mozzarella until melted.
- Prepare sauce: In the same skillet, melt remaining butter; add garlic then pour in heavy cream and broth to simmer.
- Mix cheeses: Whisk in cream cheese, Velveeta, mozzarella, and Parmesan until melted and smooth.
- Combine: Add Italian seasoning; mix sauce with rotini using reserved pasta water if necessary.
- Serve: Plate rotini with cheesy garlic chicken beside it; garnish with herbs.
