- 1 cup + 2 tablespoons all-purpose flour

- 3/4 cup + 2 tablespoons granulated sugar
- 1/4 cup vegetable oil
- 1 egg
- 2/3 cup buttermilk
- 4 ounces cream cheese
- 1/4 teaspoon vanilla extract
- 1/4 cup cherry pie filling
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, mix sugar and vegetable oil until smooth. Add egg and vanilla.
- Alternately mix dry ingredients with buttermilk until just combined.
- Divide batter into liners and bake for 18-20 minutes until a toothpick comes out clean. Cool completely.
- For the filling, beat cream cheese with sugar and vanilla until smooth. Hollow out cooled cupcakes and fill with cheesecake mixture.
- Whip heavy cream with sugar and vanilla until stiff peaks form; pipe frosting on top of filled cupcakes.
