  • 1/4 cup cherry pie filling

Instructions

  3. In a large bowl, mix sugar and vegetable oil until smooth. Add egg and vanilla.
  4. Alternately mix dry ingredients with buttermilk until just combined.
  5. Divide batter into liners and bake for 18-20 minutes until a toothpick comes out clean. Cool completely.
  6. For the filling, beat cream cheese with sugar and vanilla until smooth. Hollow out cooled cupcakes and fill with cheesecake mixture.
  7. Whip heavy cream with sugar and vanilla until stiff peaks form; pipe frosting on top of filled cupcakes.
