- 1 ¾ lbs boneless skinless chicken breasts
- 1 lb grape tomatoes
- 8 oz mozzarella balls (drained)
- Fresh basil leaves for pesto
- Olive oil
- Balsamic glaze
- Salt and black pepper
Instructions
- Soak wooden skewers in water for at least 1 hour.
- Preheat the grill to medium-high heat (425°F).
- Thread chicken pieces and grape tomatoes onto skewers, alternating between them.
- Brush skewers with olive oil and season with salt and pepper.
- Grill for 4-6 minutes on each side until the chicken reaches an internal temperature of 165°F.
- While grilling, prepare pesto by blending basil, parmesan cheese, nuts, garlic, and olive oil until smooth.
- Once cooked, top each skewer with mozzarella balls and drizzle with pesto and balsamic glaze before serving warm.
