Ingredients
- 3 boneless skinless chicken breasts
- 1/4 cup olive oil
- 2 tablespoons butter
- 2 teaspoons cornstarch
- 1/4 cup water
- 1/2 cup pure maple syrup
- 1/4 cup orange juice
- 1/4 cup apricot preserves
- 2 tablespoons balsamic vinegar
- 1 tablespoon reduced sodium soy sauce
- 1 tablespoon Dijon mustard
- 1 – 1 1/2 teaspoons chipotle chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/4 teaspoon oregano
- 1/4 teaspoon pepper
- 1 teaspoon orange zest
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a medium bowl, whisk together marinade ingredients, reserving half for glazing.
- Combine spices in a small bowl and add to the marinade. Marinate chicken for 2 to 6 hours.
- Preheat grill to medium heat (375°F to 450°F). Grill chicken for about 3–4 minutes per side until cooked through.
- In a saucepan over medium heat, combine reserved glaze ingredients and bring to a simmer until thickened.
- Brush cooked chicken with glaze before serving.
