- Sift together flour, cornstarch, salt, baking soda, and baking powder. Gradually add the dry mixture to the wet ingredients at low speed until just combined.
- Fold in semi-sweet chocolate chips and Easter sprinkles until evenly distributed throughout the dough.
- Using a 4oz scoop, portion out eight dough rounds. Flatten each round slightly and place a Peep vegan marshmallow in its center.
- Wrap the cookie dough around each Peep completely, ensuring it is fully enclosed.
- Chill the stuffed dough balls in the refrigerator for at least two hours or up to forty-eight hours.
- Preheat your oven to 375°F (190°C) and line your baking sheets with parchment paper.
- Arrange four cookies per sheet and bake for about fourteen to sixteen minutes or until the edges are golden brown.
- Allow cookies to cool on the tray for twenty to thirty minutes before moving to a wire rack.
