- 3 large egg whites
- 3/4 cup granulated sugar
- 1/4 tsp cream of tartar

- 1/2 tsp strawberry extract
- pink gel food coloring (optional)
- 1/2 cup dark or semi-sweet chocolate chips (melted)
Instructions
- Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the egg whites and cream of tartar on medium speed until frothy. Gradually add sugar one tablespoon at a time while increasing the speed to high until stiff peaks form.
- Gently fold in salt and strawberry extract; add pink gel food coloring if desired.
- Spoon or pipe small rounds onto the prepared baking sheet.
- Bake for 1.5 hours, then turn off the oven and let cool with the door slightly ajar.
- Dip cooled meringues in melted chocolate and set on parchment paper to harden.
