Ingredients
- 1 small head garlic
- 1 cup chopped fresh cilantro leaves
- 1 lime (juiced)
- 3 to 4 tablespoons extra virgin olive oil
- 2 tablespoons harissa (or your favorite chili paste)
- 1.5 pounds large shrimp (peeled and deveined)
- Kosher salt and black pepper
Instructions
- Preheat oven to 400°F.
- Trim garlic head, drizzle with olive oil, wrap in foil, and roast for about 10 minutes until tender.
- Once cooled, peel and crush the roasted garlic.
- In a bowl, mix crushed garlic with cilantro, lime juice, olive oil, and harissa.
- Heat skillet or grill; season shrimp with salt and pepper and cook for about 2 minutes per side until pink.
- Toss cooked shrimp in the garlic sauce and serve immediately.
