Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In another bowl, mix sugar, eggs, vegetable oil, vanilla extract, and grated zucchini until well combined.
  4. Gradually add dry ingredients to wet ingredients and stir gently until just mixed.
  5. For the cinnamon swirl filling, mix melted butter with sugar and ground cinnamon in a small bowl.
  6. Pour half of the batter into the prepared loaf pan. Drizzle half of the cinnamon filling over it and swirl gently with a knife. Add remaining batter and repeat with the rest of the filling.
  7. Bake for 45-55 minutes or until a toothpick inserted comes out clean.
  8. Allow cooling in the pan for 10 minutes before transferring to a wire rack. Drizzle with glaze made from mixing powdered sugar and milk.
