  • 45 pound turkey breast, bone-in, skin-on
  • 1/2 cup unsalted butter, softened
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Onion quarters, lemon slices, orange slices for aromatics
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Pat the turkey breast dry with paper towels.
  3. In a bowl, mix softened butter with lemon zest, orange zest, rosemary, thyme, sage, garlic, salt, and pepper until well combined.
  4. Gently loosen the skin on the turkey breast and spread half of the herb butter mixture underneath. Rub the remaining butter all over the exterior.
  5. Stuff onion quarters inside the cavity and arrange lemon and orange slices around and inside the turkey.
  6. Place the turkey in a roasting pan and pour chicken broth into the bottom of the pan.
  7. Roast for about 1 hour 40 minutes or until the internal temperature reaches 165°F (75°C), basting every 30 minutes.
  8. Let rest for at least 20 minutes before slicing.
