  • 3 tablespoons butter

Instructions

  1. Prepare the dough by mixing flour, shortening, and salt until crumbly. Gradually add cold water until combined.
  2. Chill the dough in plastic wrap for about an hour.
  3. Roll out half of the chilled dough and fit it into a 9-inch pie pan.
  4. In a bowl, toss sliced peaches with lemon juice. In another bowl, mix flour (or tapioca), sugar, cinnamon, and nutmeg; combine with peaches.
  5. Pour the peach mixture into the crust and dot with butter.
  6. Roll out the top crust, cut slits for ventilation, and place it over the filling. Seal the edges securely.
