- 5 cups fresh peaches, sliced (skins removed)

- ¾ cup sugar
- ¼ teaspoon cinnamon
- ½ teaspoon nutmeg
- 3 tablespoons butter
- 1 tablespoon milk
- 1 tablespoon sugar
Instructions
- Prepare the dough by mixing flour, shortening, and salt until crumbly. Gradually add cold water until combined.
- Chill the dough in plastic wrap for about an hour.
- Roll out half of the chilled dough and fit it into a 9-inch pie pan.
- In a bowl, toss sliced peaches with lemon juice. In another bowl, mix flour (or tapioca), sugar, cinnamon, and nutmeg; combine with peaches.
- Pour the peach mixture into the crust and dot with butter.
- Roll out the top crust, cut slits for ventilation, and place it over the filling. Seal the edges securely.
- Brush with milk and sprinkle with sugar before baking at 425°F for about 40 to 45 minutes until golden brown.
