Instructions

  1. Wash bok choy leaves thoroughly and slice. Separate the green stalks from the white bulbs of green onions.
  2. Heat oil in a large pan over medium heat, sautéing green onion bulbs until soft. Add ginger-garlic mixture and stir.
  3. Add sliced bok choy to the pan, cooking for about one minute before adding star anise, bay leaf, and cinnamon stick.
  4. Pour broth into the pan, season with soy sauce and vinegar, then bring to a boil. Simmer for 8–10 minutes.
  5. Stir in lime juice and discard whole spices before serving.
