- 2 lbs beef cubes (chuck or stew meat)
- Salt and freshly ground black pepper, to taste
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- Coconut milk (or broth) as needed to cover ingredients
Instructions
- Trim beef cubes into bite-sized pieces, chop the onion, mince the garlic, and grate the ginger.
- In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Season beef with salt and pepper; sear until browned on all sides. Remove from pot.
- Add chopped onion to the pot; sauté until translucent. Stir in garlic and ginger until fragrant.
- Add curry powder, cumin, and coriander to the onions; cook for another minute.
- Return beef to the pot; pour in enough coconut milk (or broth) to cover ingredients. Bring to a simmer and reduce heat to low.
- Cover and let simmer gently for about 1.5 hours until beef is tender.
- Prepare fries according to package instructions or fry fresh; cook rice as per package directions.
- Serve hot with fries and rice.
