- 2 cups potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup onion, chopped
- 2 cups kale or cabbage, chopped
- 1 cup green onions, sliced
- Olive oil, to taste

- Black pepper, to taste
Instructions
- In a large pot over medium heat, add olive oil. Sauté chopped onions until translucent.
- Stir in diced potatoes and pour in vegetable broth. Bring to a boil; then reduce heat and simmer until potatoes are tender (15-20 minutes).
- Add chopped kale or cabbage and sliced green onions; cook for another 5-7 minutes until greens are wilted.
- Blend the soup using an immersion blender until creamy (or carefully transfer batches to a standard blender).
- Season with salt and black pepper to taste before serving.
