Instructions

  1. Sauté onion in olive oil until translucent. Add diced carrots, then stir in rinsed rice with water and salt. Simmer until fluffy.
  2. Toss chicken in olive oil and seasonings. Sauté over medium-high heat until golden brown.
  3. Toss zucchini slices in olive oil, oregano, salt, and pepper. Roast at 400°F for 15-18 minutes.
  4. In a pan with olive oil, cook garlic briefly; add greens with salt and sauté until wilted.
  5. Combine tomatoes, cucumber, and lettuce; dress with olive oil and vinegar/lemon juice.
  6. Arrange all components beautifully on a plate.
