Ingredients
- 1 chicken breast, cubed
- 1 cup rice (white or brown)
- 1 small carrot, diced
- 1 small zucchini, sliced
- 1 cup spinach or kale, chopped
- ½ cup cherry tomatoes, halved
- ½ cucumber, sliced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt & pepper to taste
- 1 tbsp onion, finely chopped
- 1 tsp vinegar or lemon juice
- Pinch of oregano
Instructions
- Sauté onion in olive oil until translucent. Add diced carrots, then stir in rinsed rice with water and salt. Simmer until fluffy.
- Toss chicken in olive oil and seasonings. Sauté over medium-high heat until golden brown.
- Toss zucchini slices in olive oil, oregano, salt, and pepper. Roast at 400°F for 15-18 minutes.
- In a pan with olive oil, cook garlic briefly; add greens with salt and sauté until wilted.
- Combine tomatoes, cucumber, and lettuce; dress with olive oil and vinegar/lemon juice.
- Arrange all components beautifully on a plate.
