- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups fresh broccoli florets
- 1 cup uncooked long-grain rice
- 2 cups low-sodium chicken broth
- 1 tsp onion powder
- 1 can (10.5 oz) cream of mushroom soup
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper, then cook in a skillet until browned. Cut into bite-sized pieces.
- In a saucepan, boil chicken broth and add rice; reduce heat and simmer until rice absorbs liquid (about 18-20 minutes).
- In a large bowl, mix cooked rice, chicken pieces, broccoli, cream of mushroom soup, onion powder, and garlic powder until well combined.
- Pour the mixture into the prepared baking dish and cover with foil. Bake for 30 minutes.
- Remove foil and bake uncovered for an additional 10 minutes until bubbly.
