- 1 tbsp olive oil
- 6 chicken or turkey sausages (about 14 oz total)
- 1 onion, chopped
- 2 celery stalks, sliced
- 2 carrots, sliced
- 2 garlic cloves, minced
- 4 cups chicken or vegetable broth
- 3 medium potatoes, peeled and chunked
- 1/2 cup wild rice
- Salt to taste
- 1 ½ cups light cream or half-and-half
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion until translucent, then add celery and carrots until soft. Stir in garlic for one minute.
- Add sausages; brown on all sides for 5–7 minutes. Remove, slice into bite-sized pieces, and set aside.
- Sprinkle flour over sautéed vegetables and stir for two minutes.
- Gradually pour in broth while stirring; add bay leaves and thyme. Simmer for about 10 minutes.
- Incorporate wild rice and potatoes; bring to a boil then reduce heat. Cook uncovered for 30–40 minutes until tender.
- Stir in cream or half-and-half; season with salt before serving.
