- 1 lb turkey sausage (spicy or mild)
- 2 medium Yukon Gold potatoes, diced
- 1 medium onion, chopped
- 2 medium carrots, sliced
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 cup heavy cream
- 2 cups fresh spinach or kale
- 2 tsp Italian seasoning

- 2 tbsp extra virgin olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until soft.
- Add minced garlic and cook until fragrant. Crumble in the turkey sausage and brown thoroughly.
- Stir in the diced potatoes and Italian seasoning; mix well.
- Pour vegetable broth into the pot and bring to a boil. Reduce heat to simmer for about 20 minutes or until potatoes are tender.
- Stir in heavy cream followed by spinach or kale until wilted. Adjust salt and pepper before serving.
