- 1 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 large egg, room temperature
- 3 1/4 cups all-purpose flour
- 2 1/2 cups fresh or frozen cranberries
- 3/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line an 8 x 8 baking pan with parchment paper.
- In a stand mixer, cream together the butter and sugars until fluffy. Mix in the egg and vanilla until combined.
- In a separate bowl, whisk flour, baking powder, cinnamon, and salt before adding to the wet mixture. Mix until combined but do not over-mix.
- Reserve about 2 cups of dough for topping. Press the remaining dough into the prepared pan and bake for about 15 minutes.
- Meanwhile, mix cranberries with sugar, cornstarch, orange zest, juice, and vanilla for the filling.
- Pour the cranberry mixture over the pre-baked crust and crumble reserved dough on top.
- Bake for an additional 45 minutes, covering with foil if necessary to prevent over-browning.
- Allow cooling completely on a wire rack before slicing.
