- 8 oz penne pasta or any short pasta of choice
- ½ cup grated Parmesan cheese

- 2 green onions, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion, bell peppers, and garlic for about 5 minutes until soft.
- Add cubed chicken, Cajun seasoning, and smoked paprika; cook until chicken is browned (6–8 minutes).
- Pour in chicken broth and diced tomatoes; bring to a boil, then reduce heat and simmer for 10 minutes.
- Add penne pasta and cook until al dente per package instructions (about 10 minutes).
- Stir in heavy cream and Parmesan cheese; season with salt and pepper. Heat through for another 2–3 minutes.
- Serve garnished with sliced green onions and chopped parsley.
