Ingredients
- 1 lb penne pasta
- 1 lb boneless, skinless chicken breast
- 1 tbsp olive oil
- 3 cloves garlic
- 4 cups fresh spinach
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
Instructions
- In a large pot over medium heat, add olive oil. Once hot, sauté bite-sized pieces of chicken until browned (5-7 minutes). Remove and set aside.
- In the same pot, sauté minced garlic for about 1 minute until fragrant.
- Add chopped spinach and cook until wilted (2-3 minutes).
- Return chicken to the pot, pour in chicken broth, and bring to a boil. Add penne pasta and cook according to package instructions until al dente.
- Lower heat, stir in heavy cream and mozzarella cheese until melted and combined.
- Serve hot straight from the pot.
