- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breast, diced
- Salt and pepper to taste
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz uncooked penne or rotini pasta
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
Instructions
- Heat olive oil in a large pot over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned, about 5-7 minutes.
- Stir in the onion and garlic; sauté until the onion becomes translucent (3-4 minutes).
- Pour in the chicken broth; bring to a simmer. Add heavy cream and stir well.
- Add uncooked pasta to the pot. Cover and cook according to package instructions until al dente, stirring occasionally.
- Once cooked, reduce heat to low and mix in mozzarella and Parmesan cheese until melted and creamy. Fold in fresh spinach until wilted.
